Add ability to schedule workflows [days] or [hours] after workshop booking trigger

I'm setting up a workflow to send students a reminder to complete pre-workshop assessments. I'd like to schedule this to send [24 hours] after their workshop booking trigger because we already send them a confirmation email and learner portal invite upon booking.

So sending a reminder at the same time feels like too much to send all at once, but if I trigger 72 hours before [workshop start date], I could miss someone booked after that time.

I know I could try looking at a report row event but these take quite a lot of work to set up and we would find it really helpful to be able to send a reminder a certain period after a student's workshop booking is confirmed.

Perhaps this is already a setting and I am missing a step, if so, hopefully someone can help me out to set this up :)
